Recipe for Ghee

Ghee - In cooking and on a sandwich

Ghee has been used for thousands of years in Indian/Ayurvedic cooking. It has many positive effects on the body especially for digestion and the body's uptake of nutrients. In addition, it lowers any heat (fire) in the body and is great for skin problems… in India it is even used to lose weight, then with medically added herbs. Much research has also been done on ghee and its medicinal properties.

Boil/simmer 2 packets of real butter (500 g each) in a thick-bottomed saucepan/cast iron pot for about 25-30 minutes on low heat. It may bubble a little and let it boil without a lid so that the water can evaporate. It is finished when it starts to smell like caramel plus when it has started to separate with white accumulations of slag products and transparent liquid (ghee). Then let it cool (then most of the white liquid sinks to the bottom and you do not have to filter it) and then pour the transparent liquid into glass jars. Otherwise, you can take a spoon and remove the white accumulations when it boils or afterwards.

Feel free to store the jar you use in room temperature and the other in the refrigerator. Always use a clean and dry spoon in the ghee. As long as the ghee is not contaminated, it lasts a long time. According to Ayurveda, 100 year old ghee is the best!

Use abundantly in cooking, several tablespoons. You can even have it on a sandwich if you like it. Feel free to replace some of your oils with ghee. All oils are hot in nature, and therefore too much intake of different oils can increase the heat in digestion, especially for Pitta stomachs. Therefore, it is wise for everyone to sometimes use oils and sometimes Ghee when cooking, it is also possible to mix if you want. The oils that are least hot and then also recommended for Pitta stomachs are olive oil and coconut oil.

If you do not want to make ghee yourself, you can buy it in health food stores, but it is not made from Swedish butter, so it is not as good. Try to make it yourself, it's a bit messy the first time but then it gets easier and it's great for your digestion!
